IR = heat = myth. UV is hotter than IR.

Hi:

Naive individuals tend to associate infrared radiation with heat. This
is wrong. Let's say there are two beams of light, one is UV and the
other is IR. If the two beams have the same
photons-per-second-per-square-meter and are absorbed with equal
efficiency by the target, and we disregard the losses from the target
after the beams are absorbed, the UV beam will result in a higher
temperature than the IR beam because UV has more energy than IR.

I am now thinking of using a UV laser to cook my butter pound cake!

The myth is that you have more than two functioning brain cells.

Hot things emit IR which is well known to those with more than two brain

Very hot objects will emit more energy as  ultraviolet radiation than
infrared, but it requires temperatures at which the object can only
exist in a plasma state.  The surfaces  of some stars do that.   Our Sun
isn't hot enough, though it does emit considerable energy in the
ultraviolet.

The OP is  naive however in thinking that ultraviolet would be desirable
for rapid cooking.   Even cooking using infrared radiation has the
problem of  carbonizing the surface of the food while leaving the inside
cold. Humans have been taught to think it tastes good for their food to
have a burned surface and a raw core, particularly when the food is a
dead bovine.   But cooking with infrared energy (and liquid convection)
is  all humans had to cook with for tens of thousands of years.    An
ultraviolet oven would just worsen the charring effect.

Enlightened people today cook food using electromagnetic energy at
wavelengths similar to the size of the food being cooked to give uniform
heating.  That relatively recent invention is called the microwave oven.
Food cooked in a microwave oven is at least it's thoroughly cooked even
if it tastes awful.   Where's that charred steak?

Personally, I like charring. Pork spare ribs that are smoke-black on the
 outside yet blood-red on the inside -- now thats yummy!!!

Same for crossiant and muffins. A little charring goes a long way to
enhancing the flavor.

Best if the over has the UV laser on top shining down on the food below.

Microwave oven are just for re-heating. Ever try cooking french fries in
the microwave? EEK! NASTY!!!!

So top that garlic bread with butter and then sear it in the UV laser over.

Depends on how hot something is.  The Sun is 5800K for
example, and radiates all along the visible spectrum,
as well as in the infrared and ultraviolet.

Even electrical burner elements can glow a dull red when
turned up high.  (Not good for certain pans.)

Of course, infrared cameras can easily pick up animals or
humans wandering around in the dark.  I don't know
the exact wavelength offhand, though.

It's interesting to note
that they used special IR instruments
to detect live people after the recent earthquake in China.

I notices that some of the instruments used a fiber optic bundle
that allowed the sensor to be snaked around obstructions.

They not only found and rescued humans,
but I see that these instruments also let them
find some trapped dogs and cats.

Things that are much hotter emit UV. Besides not all hot things emit IR.
Its gotta be off a certain temperature or above. Below that temp, you
have submillimeter radiation, below that, yet get RF radiation.

In incandescence, emission of shorter wavelengths requires higher
temperature.

To be more precise, why is it you can feel it is hot simply
by placing your hand close to the object?

emission is in the visible. Warm objects are seem like that because
the blackbody peak at low temperatures is in the IR, which your skin

IR itself does not stimulate nerve cells. It's the temperature that
does. The heat receptors' excitation does not at all relate to whether
the heat is radiant, conductive, or convective. It's the increase in
temperature that stimulates heat receptors. IR has absolutely no effect
on heat receptors, because IR is not heat any more than any
electromagnetic radiation is. Heat is the type of energy that results
from temperature difference and is carried from the higher-temperature
object to the lower-temperature object. Just what the quantum
particle/wave of heat is, continues to be a complete mystery -- and no
it is *not* the phonon. Phonon is the quantum of sound.

You don't want any other chemical reaction to start. Which do you use?
IR! IR will speed the chemical reaction up without adding
photochemical reactions.
   Suppose you want have this plastic goop and you want to harden it
by photochemical reactions. The goop is evaporating. You know raising
the temperature will speed up evaporation. Which do you use? UV! UV
will cause photochemical reactions, IR will not.
   One way to say this is that UV contains less entropy per joule
than IR. IR has so much entropy per joule that one may as well call it
heat.
