Fruit textbook

I teach intro botany labs and am not particularly strong on fruit--a
topic I find very complicated. Does anyone have a recommendation for
a good fruit textbook?

You are correct that fruit classification is complicated. The book and
website by Richard Spjut explains historical reasons for some of the
confusion and adds many new fruit terms for a more comprehensive, but
considerably more complex system with 95 fruit types. However, he notes
that most fruits fit one of 14 types.
